Ideally you would have all the prices displayed in your local currency and the crypto you would pay would be set to that currency amount at point of sale.
They could use XMR as it has a very low fee rate and is relatively stable.
The general issue is the potential fees with crypto in general, but XMR has very low fees at least now, and the transactions are comparatively anonymous.
